There is something absolutely refreshing about making your own sandwich with recipes straight from your backyard. Today, I decided to go organic with my own afternoon snack. Good thing nobody was at home and I had the luxury of time to spend it solely with myself. I decided to visit my garden and pick out some fresh tomatoes as well as fresh green basil leaves to make the most organic Bufala Mozzarella Quesadilla. You will need the following: Basil Mayonnaise: 6 tbsp mayonnaise (I used low-fat) 3 tbsp thinly sliced fresh basil Quesadilla: 8 whole wheat tortillas 4 medium tomatoes, cut into 1/2-inch thick slices 6 oz. fresh Bufala Mozzarella, cut into strips Steps to Follow: 1. For the mayonnaise, stir together mayonnaise and basil. Set aside. 2. For the quesadillas, spread the basil mayonnaise on one side of each tortilla. 3. Lay tomato slices and Bufala Mozzarella strips on 4 of the tortillas. Cover with remaining tortillas. 4. Preheat skillet over medium-high heat (you can use 2 skillets to make this process faster). 5. Place quesadillas, cooking one at a time, in skillet. 6. Cook until cheese is melted and tortillas are golden brown, 2 to 3 minutes per side. 7. Remove from pan and let rest for a couple of minutes. Cut each quesadilla into 4 wedges. I was unaware that I missed spending time with myself. Indulging in my favorite quesadilla used to be my favorite past time whenever I was alone. Good thing I still have the Bufala Mozzarella Cheese in the fridge today. I always order gourmet cheese online through the only gourmet cheese shop I know. You too can make this recipe.
