I went to visit my cousin, who also happens to be my best friend in the world, in England this summer. Originally, the plan was for me to stay there for a week. But immediately after two days of walking around the town she stayed in, I decided to stay a couple weeks more. I think that I might have fallen in love with the place, the culture, and yes, I am in love with the great cheese known as the Blue Stilton Cheese. My cousin happens to live in a village in Cambridgeshire called the Stilton village. She introduced me to this famous cheese and now I can’t live without. She also educated me about the said cheese. She says that the Blue Stilton's distinctive blue veins are created by piercing the crust of the cheese with stainless steel needles, allowing air into the core. The manufacturing and ripening process takes approximately nine to twelve weeks. Apparently, I also learned that this particular cheese cannot be made anywhere else in the world, making it the “King of All Cheeses”. For cheese to use the name "Stilton", it must be made in one of the three counties of Derbyshire, Leicestershire and Nottinghamshire, and must use pasteurised local milk. The manufacturers of Stilton cheese in these counties applied for and received Protected Geographical Status in 1996. Now I know why my cousin didn’t ever want to leave England. She has all these lovely people around her, she lives in a place that is rich in culture, and of course, she stays in the place where she could have the most authentic Stilton Cheese at any time of the day.
